Eggplant “Meatballs”

For the most part Tyler will entertain me and try any creation I come up with {except jam on egg sandwiches :P}. Eggplant is probably his least favorite veggie that I try to sneak into things. If you’ve never had eggplant, I encourage you to try it. I like it in veggie lasagna or just thrown into spaghetti sauce or grilled up for a veggie panini. It is very versatile but a little tricky to cook with at times. It’s a very squishy vegetable when cooked so it’s best used in recipes where you can crisp it up a bit. I found this recipe on Skinnytaste. Her recipes NEVER disappoint but this recipe, woah baby. So. Good. You won’t miss the meat at all in these lovely little “meatballs”.


Eggplant “Meatballs”

(this recipe is just slightly adapted from Skinnytaste based on what ingredients I had on hand)


Cooking spray

½ tbsp. olive oil

1 large eggplant, chopped into 1” cubes

¼ cup water

Salt and pepper, to taste

2 tsp garlic powder

1 tsp onion powder

2 tbsp. chopped basil

1 ½ cups bread crumbs

1 large egg beaten

¾ cup mozzarella

1 jar of spaghetti sauce


  1. Preheat oven to 375°F and spray a large baking sheet with cooking spray.
  2. In a large skillet, heat ½ tbsp. olive oil. Add eggplant and water to oil. Season with salt and pepper. Cook until tender 10-12 minutes.
  3. Transfer eggplant contents to large bowl. Add breadcrumbs, beaten egg, mozzarella, garlic powder, onion powder, and chopped basil to eggplant mixture. Mix well.
  4. Form mixture into 24 balls.
  5. Transfer to baking sheet. Bake 20-25 minutes until browned.
  6. While meatballs are baking, heat sauce in large skillet. Once meatballs are cooked, add meatballs to sauce and simmer 5 minutes.


I served these tasty meatballs over roasted yellow squash and mushrooms sprinkled with mozzarella. I always loved meatballs growing up and in a recent move towards consuming less meat, these little guys will be showing up on our dinner list again and again.
